Make sure auto attack is not checked in the interface. Make sure you left click to select a target and not right click. Right click starts auto attack.

Right clicking will automatically start your auto attack, especially for hunters (which it sounds like you are) as they're ranged, so pretty much anything is viable.
Otherwise, there are macros you can do that will pop an ability and then turn off auto attack.
So, all in all, just left click.

You said you didn't want to be auto attacking...

I think I get what you mean... you want to shoot once but not turn auto attack on.
See, attack
is
auto attack. There is no option (by default atleast) for a single white shot. You could try using this macro:/startattack
/stopattack
which will, in theory, shoot once (or it will not shoot at all. Not tested.)

Auto attack does not cause your attacks to slow -- they simply fire between your other shots. It's just extra damage while you fight and while you're focus starved.
