There are many pop culture references in WoW. This is merely another example. The fact it has to do with pandas ties it in even better!
Have played since early 2005 and I still come across references I haven't seen before - I like finding them so thank you for pointing this one out :)

There is a second NPC in the water swimming nearby. Eva Dendra, Mei turns and follows her progress as she swims in a semi-circle around the island. While It's possible that Mei Laoshi is a reference to this book, I'm not sure what the second character references...

Mei Laoshi means "pretty teacher" in Mandarin Chinese. Mei is also a very common girl's name. It wouldn't be much of a stretch to come up with a name like that for a <Swim Instructor> given Blizz's other brute-force names since 1.0.

Eva Dendra is an anagram for, "Dead Raven." Every day in Miami, a man named Robert "Raven" Kraft runs eight miles along the beach and then ends his run with a 1/3 mile swim in the Atlantic Ocean. But,
according to Wikipedia
, he is still alive. Could be something, but it's probably a miss. Still, it's the best explanation I could find in about half an hour of looking.

I think you're right and she's been overlooked, I can't find her in the Wowhead database. I can't find Eva Dendra either. I'll have to go see it for myself now :) Thankyou!
