Any suggestions on which professions I should take on?

Hello there fellow WoW players, long time off and on player here.
I am coming back to WoW's newest expansion MoP with high expectations. I am transferring my main character to a new server and creating a new character. My main's only profession is mining, but it is at 600. ( I was trying to find a new profession but could never decide, it's going to be Herbalism though so it will be leveled up fasterish but that could be a factor in deciding my new character's professions.) Anyway, my new character is going to be either a Mage, Warlock, or Priest. I haven't decided yet but it will definitely be one of those three. I am leaning toward having this new character have engineering considering my main has 600 mining, I could get the materials cheaper essentially. If anyone has reasons why I should NOT have engineering please let me know. In any event if you all could please help me decide which professions my new Mage, Warlock, or Priest should have it would be much appreciated.

If you're going to ask 'which profession' you need to provide more information.
What class/spec do you play?
Are you raiding/pvping?
Is this a gold making toon, an alt to support your main or an actual main?

As to class/spec I've only narrowed it down to Mage/Priest/Warlock. It will be a PvP character, and I guess for him I'm looking for more of an actual main. So that I can create my current main into a gold making toon.

It really depends in that case, if you're going for something to compliment your mining, JCing and Blacksmithing is something you can never go wrong with. Both provide great bonuses to stats + save gold on expensive item enhancements. But they cost a fair bit to level.
But since you're a PVPer, engineering isn't a bad idea due to the toys it comes with. So if you're really keen on that, by all means go for it. For a second profession, check out what bonuses other profs come with. I personally like inscription due to the fact that it's the kind of profession you just forget about once you're done leveling. (at least for me anyway)
Alternatively, go for the clothie staple enchanting/tailoring. Great bonuses, decent gold making and what you craft is actually beneficial to your class.
In the end, it's really what you feel is going to be the most beneficial for you, will compliment your other profs and is within your gold range.
Also don't forget you can change your professions at any time. So you can use one set for leveling that'll provide exp bonuses and then change it at max lvl for the stat bonus ones.
