I think the reason it isn't talked about much is because with plate, you don't have a lot of choice. It's either DPS with int, straight DPS, or tanking gear. You want the straight DPS gear.

From what I understand about DK's:
Your spells gain an Attack Power coefficient, meaning that their damage goes up with the more AP you have. This means you really shouldn't stack spellpower.
Your main stat as a DK is Strength. So pretty much, go for Strength/Stamina. Also more Strength = more Parry from
Forceful Deflection

Stop trying to turn a week old class into a cookie cutter. Go respec. Play around with gear. I've seen DK's using auction house polearms just because they didn't want the same crap as everyone else.
Go them!
Hell I even went to Darn and bought a Swift Mistsaber, just because I'm sick of looking all all the Plasma Ponies.

I'm being different by Dual-wielding and running around on a blizzard bear. I'm tired of looking like all the death knights who argue in general for an hour about what each spec is made for, not realizing they're all kinda inter-connected.
Also, a very useful tool for gearing is the addon rating buster. It takes the stats on your gear (str, crit rating, etc.) and does two things with them. First, it shows them as what they translate into (AP, Crit %, etc.) and then compares them to the numbers of the gear you have on, showing for example that one ring over another gives you +1.5% crit, but -150 hp.

Under cap, 1hr actually produced more DPS than 1 str.
