You can drop what professions you currently have by hitting your K key, and then clicking on your profession. When you click on it, a window at the bottom will appear that describes the profession and you'll see a button on there that looks like a circle with a slash through it. This will drop that profession. You lose all points permanently. So if you were at Engineering 100, and you drop it, and at some point you pick up Engineering again, you start at 1.

Note that you cannot reset "secondary skills" ie Cooking, First Aid, and Fishing.
Also, if you have learned any profession specialties (Goblin Engineering vs. Gnome Engineering) there's a very good likelihood you will NOT be able to relearn them if you re-learn the original main profession.
That is, if you learn Gnomish Engineering, drop Engineering for Tailoring, then try to go back to Engineering but decide you want to be Goblin, instead, you can't do it. You can't even go back to being Gnomish.

Of course you can change your engineering specialty. that's what the book in Tanaris is for. you just have to start over at 1, get to 235 and read the book, learn a new one.
