To me my most favorite achievement has been finally getting Hydraxian Waterlords , because its a reminder of all the hard work I did back in vanilla with all my guildies and those I was friends with. I only achieved it a few weeks back, because we stopped running molten core when I had hit revered if I remember right, but the same people and me are all still in the same guild even today. :)And it was also what got the guild the classic guild raider achievement too, so can't complain about that either. ^_^
personally i loved simply because cooking is the way heck i remember killed silithid after silithid after silithid just to get my rep up with the brood of nozdormu so i could get chimaerok's kickin chops man that was some crazy times back then now i get to look forward to all the cataclysm recipes, lets grill some dragons and roast some gnoll kebabs!
My favourite achievement has to be "You feel right as Rain". Because it's redicously absurd an achievement, lol.
The Undying, because we did it when it was still hard.
Gotta Go! is one of the achievments im kinda most proud of, just because i managed to get it way before it got nerfed and much easier to get by anyone!we had to do a setup of 4 dps 1 tank, pretty much avoiding as much damage as possible, timing cooldowns and one of our hybrid dps throwing heals whenever possible, took us about 1 hour of tries but it felt great getting it when we did.
You'll Feel Right as RainSo yeah, I like cookies.... Alot!It's one of those things that bring a smile to my face. It isn't neccesarily one of the hardest but hey, eating 91 cookies in a row does take some "guts" doesn't it!
My fav achievement would have to be Glory of the Icecrown Raider (10 player) I was always into PVP and ICC was my first raiding experience. I've never done any raiding before ICC, so when our 10 man worked hard on getting this achivement, it instantly became my fav in the whole game. I remember it took us alot of work and effort to get it done back when it was content.
The Twilight Zone (25 player) back when it was still hardcore. And before my previous account was stolen by a hacker and used to farm gold, but that is another story altogether.

Mine isn't even an acheivement but it needs to be for me completing my darkmantle set on my rogue. If anyone's ever finished their set they probably know the pain, this was back in the day before addons told you eve rything to do. So this whole big questline not only required you to have all pieces of your dungeon set gear (shadowcraft armor for me, 8 pieces not 5 like today) it started out easy enough, kill some crap in winterspring and pay the questgiver 50g for some new bracers, but then it just got into rediculous stuff, 5 man undead side strat runs that had to be completed in 45 minutes ( and back then you could fit 10 people into a strat or scholo group and 15 into a UBRS and hell even LBRS if you wanted). It just became increasingly harder as the quest went on and it took you to every end game dungon in the game before BC. So by the end of it you had to fight a boss that was harder than most raid bosses, he'd channel a spell on you and if it wasnt interupted your teamate died, oh and this was in ubrs right where the beast was and you know how you could bring 15 people in the dungeon at the time? Well no you had to complete this quest with a group of 5 people cuz if you were in a raid at those times you wouldn't get credit. Not to mention adds during the encounter. The encounter itself was basic by todays standards but without all the addon help and support and tracking that you have today it was much more difficult. We probably had to attempt it 5 times before getting it and by the fifth time we had people in raid gear helping us and even they were having a difficult time with the encounter we had to use vent and everything but when he was dead and i got the credit I was overcome with excitement, it was the first great acheivement I had in WoW. Every time I see it in my bank I feel like it was my own greatest acheivement.
I think getting Damage Control is one of my proudest moments, because I was healing in Eye of the Storm for the first time (indeed, it was the first time I healed a BG). The rest of the raid group were cheering me on because I allowed them to hold the middle for the entire match. The achievement was just the icing on the cake.
I think I am most proud of having Onyxia's Lair (Level 60) primarily because I solo'd it which took along time being an elemental shaman whose biggest attacks were fire and her seeming to be immune. So basically I had to resort to the old ways of just lightning bolting her to death while healing myself. Think overall when I did it, it took an hour or more... (thank god for the wonderful ways to regain mana on a shaman!)
