Once you accept the quest from Master Stone Fist, you will notice that the "Monastic Pupil" mobs are right in front of you. You are able to challenge them by right clicking on them and requesting a fight. They have 158K health, and respawn fairly quickly.

Once you complete your 8 duels, head back to Master Stone Fist to complete the quest.

You can challenge as many pupils as you wish at once. However defeating one won't give you any killing blow perks such as the warriors victory rush.

Take on 8 as a Human monk at once and feel like Bruce Lee.. then Chuck Norris flys in and kick his ass as well! You were not prepared!

If you are a class that can take some punishment, challenge many at a time. As a pally tank, I easily could take the damage of all eight that I needed to beat at once. As Lancestalker said, it was like a scene from an epic fight movie....
